I normally don't like Hummus, but this recipe turned out pretty darned good. Just don't breath on anybody after you eat it.
1 16-oz. can chilled chick peas or garbanzo beans, drained, rinsed
Juice of one large fresh lime
2 tablespoons peanut butter
3 cloves fresh garlic
2 heaping tablespoons pickled jalapenos
1-2 tablespoons olive oil
2 tablespoons fresh cilantro leaves
a good pinch of cumin, to taste
red pepper flakes, to taste
a pinch of sea salt, to taste
Combine all of the ingredients in a food processor until smooth. Serve with fresh carrot sticks, or serve with homemade chips made with whole wheat tortillas. Personally, I don't care for whole wheat tortillas. They don't roll well and taste like cardbord. Prepared this way though, they actually don't taste bad at all, and it's good for you. I cut the tortillas in eighths, arrange them on a cookie sheet, and spray with olive oil. Bake in the oven at 300 degrees.
